Princeton Marriott at Forrestal Hotel Uses Fresh Herbs From Its Kitchen Garden Which Are Picked Moments Before a Dish Is Prepared


PRINCETON, NJ--(Marketwire - Jul 24, 2012) - For the sixth summer season in a row, the Princeton restaurants at the Princeton Marriott at Forrestal are using fresh herbs and peppers grown in the hotel's own kitchen garden, it was announced by Executive Chef Dennis Egan.

Currently, diners at the Fireside Grill can watch the Chef and his culinary team picking the herbs which they will use to prepare the items on the summer menu -- and most often these herbs are harvested just five minutes before a dish is being served. Pictured are Savitri Achaibar (cook) and Devon Benjamin (kitchen supervisor).

Chef Egan and his team planted the garden on the spacious grounds of the hotel near Princeton University in May and they are currently harvesting several types of Basil, Oregano, Thyme, Rosemary, and Lavender. The garden is also growing Jalapenos, Habaneras, and Banana Peppers.

These herbs are being used in many of the restaurant's popular dishes. The Penne Pasta features the fresh basil, the oregano is used in the Greek salad, and the thyme is used as a base for all of the sauces.
