Cinco De Mayo Kicks Off Summer's Celebration of Sunshine

TORONTO, ONTARIO--(Marketwire - May 1, 2008) - May 5 - known as Cinco de Mayo - is the day when all Canadians can be honourary Mexicans, celebrating one of the country's biggest fiestas and the unofficial kick off to Canada's patio season. Vibrant colours, festive music and the drink of choice: the margarita, summer's phenomenally popular cocktail all help get summer parties off with the right spirit.

The LCBO offers two delicious and authentic products to help Canadians create the best margarita ever. El Mayor Anejo or Reposado Tequila, which means "the greatest" in Spanish, are premium tequilas being released as a special vintage this spring in select LCBO stores. Each bottle has a certificate of authenticity revealing its three-year aging process in a small, charred, white oak barrel. Made from 100 per cent blue agave, these tequilas are perfect for sipping straight, on the rocks or as a quality cocktail.

Salvador's Original Margarita, found in the one pour cocktail section, ensures an authentic, full-flavoured and refreshing margarita with every pour. With Salvador's there's no measuring, no mixing and no fuss. Just pour over ice, freeze or blend with crushed ice and enjoy because the tequila and fresh lime are already in it. For a limited time only, Salvador's Margarita will also be available in a fabulous strawberry flavour, perfect for those who enjoy the taste of seasonal berries to the traditional lime margarita.

The secret behind the product's authenticity is that there really is a Salvador. Salvador Huerta, a well-known restaurateur in Mexico who built a reputation for serving the best original margaritas, developed his special recipe to ensure his restaurants' patrons are served his consistently genuine margarita across his restaurant chain. The freshest ingredients, combined with quality tequila is the reason Salvador's Original Margarita is the life of every party.

"Tequila and the ever popular margarita, make every day a Cinco de Mayo celebration," says Jennifer May, distributor of El Mayor and Salvador's Original and Strawberry Margarita products. "Summer's best cocktails begin with the finest tequila and El Mayor and Salvador's offer quality products that fit everyone's lifestyle."

A 750 ml bottle of El Mayor Anejo Tequila retails for $74.95 (El Mayor Reposado is $66.95/750ml) and both are available in the Vintage Section of the LCBO. Salvador's Original Margarita is one of the most economical cocktails on the market today. At $20.70 for a 1.75 Litre bottle, each 5-oz serving costs well under $2 and is also available at the LCBO. Salvador's Strawberry Margarita is available in a 750ml only, at a price point of $10.95/bottle.

Grilled Chicken with Citrus Salsa
1/4 cup plus 1 tablespoon lime juice
1/4 cup plus 1 tablespoon olive oil
2 jalapeno peppers, one sliced, one diced
4 boneless, skinless chicken breasts
Salt and freshly ground pepper
1 cup Salvador's Original Margarita, plus 1/2 cup
1 navel orange peeled and sectioned
1 small grapefruit, peeled and sectioned
4 scallions, thinly sliced
10 red cherry tomatoes, sliced
1/4 cup chopped cilantro
Grated zests of 1/2 lemon, 1/2 orange
4 handfuls of mixed lettuce

In a shallow bowl, combine 1/4 cup of the lime juice, oil and the jalapeno pepper slices. Rub chicken with the salt and pepper. Add to marinade. Add in 1 cup Salvador's Original and marinade for at least 1/2 hour in the refrigerator. In a medium bowl combine citrus fruits, scallions, tomatoes, remaining lime juice, oil, salt and pepper, diced jalapeno pepper, cilantro and fruit zests. Add 1/2 cup of Salvador's Original to mix and set aside.

Remove chicken from marinade and cook on hot grill for five minutes each side, or until thoroughly cooked. Remove from grill and let stand five minutes. Divide the lettuce among four plates. Slice the chicken and arrange on top of the lettuce. Spoon salsa over chicken and lettuce and serve immediately.
