Alderbrook Resort & Spa Names Lucas Sautter as Executive Chef

Veteran Chef and Loyal Member of Alderbrook's Culinary Team, Sautter Brings Modern Style and Experience to the Historical Restaurant

UNION, WA--(Marketwire - Nov 9, 2011) - Alderbrook Resort & Spa is pleased to announce Lucas Sautter, a valued employee in the Restaurant at Alderbrook since 2005, has been promoted to Executive Chef. Sautter, a French trained chef who began his career in the kitchen at age sixteen, will oversee menu development, ordering, teaching and training of staff, and overall supervision of the Restaurant. Additionally, Sautter will bring his fresh culinary style to menu planning for special events such as weddings and seasonal five-course winemaker and Brewmaster dinners.

A veteran in the Alderbrook kitchen, Sautter started out as Lead Line Cook and worked his way up to Lead Banquet Chef, and now, the appointed Executive Chef. Prior to Alderbrook, he was the Executive Chef of Basilico Ristorante Italiano in Olympia, Washington, Sous Chef at Thaifoon in Scottsdale, Arizona and has worked at four star restaurants such as The Tack Room in Tucson, Arizona. Sautter's culinary interest began at the age of sixteen while working as a dishwasher in his hometown of Colorado Springs, Colorado. Instantly coveting the white hats he saw on the chefs, he continued on the culinary path and graduated from the Scottsdale Culinary Institute in Arizona. Sautter plans to update the menu, highlighting seasonal produce and local ingredients while focusing on great flavor and a beautiful presentation.

Sautter has already integrated his style into the dinner menu with more than fifteen new dishes that feature Pacific Northwest favorites with seasonal flavors and ingredients. Some of the new offerings include:

  • Stuffed Peppadew -- sweet peppers stuffed with boarsin cheese, bacon and chives
  • Arugula Winter Salad -- with frisee, endive, cucumber, lemon, truffle oil and parmesan
  • Chicken Saltimbocca -- chicken with prosciutto, fresh sage and white wine pan sauce served with fontina and rosemary bread pudding and sautéed spinach
  • Mediterranean Lamb T-Bones -- with mint charmoula sauce and served with roasted garlic and olive oil mashed potatoes and bacon braised brussels sprouts
  • Crispy Skin Red Snapper -- with cherry tomato relish and served with pancetta and gruyere risotto and spinach

Gourmet fare aficionados looking to sample Chef Lucas' culinary creations in Seattle can reserve a spot this Dec. 8 at FareStart, Seattle's culinary job training and placement program for homeless and disadvantaged men, women and families. Chef Lucas will host Guest Chef Night, a weekly program that allows FareStart students the chance to work with Seattle's premier chefs to prepare a three-course meal for over 200 guests.
