The dishes here don't create themselves, and are the work of chefs de cuisine Eric Ciais and Raphaël Maumy. Ciais joined the restaurant at the start of 2012, bringing his education from the Alain Ducasse Formation in Paris and expertise in Thai, Japanese and South American food. Here he creates items with lamb, chicken, salmon and other seafood, and likes to put healthy twists on classic French dishes. Maumy has been at the restaurant since mid-2011, and got his training at Château Chinon School in Nièvre, where he specialized in catering and pastry.
