Today, Alida Solomon, Frank Heaps and James Estrin announce their venture into Tuscany with the creation of a unique Canadian-owned proposition: a microbrewery, boutique hotel and restaurant.

Michelin recognized chef and restaurateur Alida Solomon of Tutti Matti Toronto is returning to Tuscany to open a high-end boutique hotel and a restaurant unparalleled to anything currently in the region. "Tutti Matti Tuscany will be an exclusive restaurant, hotel and microbrewery in the heart of Italy's wine country," said the Canadian/Tuscan executive chef. "The majority of our harvest, herbs and game birds will be produced at our on-site bio farm and served expertly in a unique farm-to-table atmosphere," proudly added Solomon.

She has teamed up with Frank Heaps, one of Canada's leading craft brewing pioneers of Upper Canada and Steam Whistle Brewing to include an on-site artisanal (craft) brewery and brewpub, and James Estrin, a Toronto real estate professional and expert in the development of luxury resort properties who helped source and secure the perfect location for this exclusive venture.

Restaurant & Hotel

Tutti Matti Tuscany's unique travel and hospitality offering will be housed in the renovated 17th century Villa San Dalmazio, just 10 minutes from Siena's exceptional Piazza Del Campo. With spectacular views of the Tuscan countryside, Villa San Dalmazio is known for having exceptional historic and architectural value. Accessed through a cypress-lined entrance, the villa features tiled floors, painted ceilings, and beautiful large principal rooms on its ground floor - ideal for the proposed fine dining restaurant; and the cellar below is a perfect 'cave' for the restaurant's wine cellar. The 12-room boutique hotel on the upper floors of the villa is complemented by a pool, its own chapel and event space, and will be marketed internationally to tourists and business travellers.


The artisanal (craft) brewery will be integrated into a café/brewpub equipped with indoor & outdoor seating and kitchen; the villa's 100 acres will also include a vineyard and olive trees. "Gourmet beer in Italy is a rapidly growing market. Our design of the brewery is unique in that its requirements for barley, the main ingredient of superior quality beer, will be met on our own property," said Heaps.

The beer industry in Italy has experienced dramatic growth very much like that of Canada and the U.S., producing more variety with interesting and complex, flavourful artisanal brews. Assisted by the expertise of one of Canada's most successful craft breweries, Steam Whistle Brewing of Toronto, Tutti Matti Tuscany's Birra dei Matti ("beer of the crazies") will enter the specialized craft beer market and will have, as its core product, a fine European pilsner and will also produce a variety of flavoured specialty beer. According to Heaps, "The majority of beer drinkers prefer lagers and pilsners so Tutti Matti Tuscany's growth will primarily come from the more discerning beer consumers, who are rapidly switching their tastes for lagers and pilsners from the mass produced national and international brands. This positioning strategy has been extremely successful for Steam Whistle in Canada."
