This Christmas, Executive Pastry Chef Jason Fraser pays tribute to his grandmother with his Gingerbread Ripple Bouché de Noel ($65). Growing up, he remembers tucking into a big bowl of creamy gingerbread treat, a family favourite created by his grandmother. In his twist of this childhood favourite, Chef Jason use gingerbread that have drawn moisture from the cream to create that perfect texture akin to dipping cookies in milk. Covered with a chocolate icing ganache, this is one delicious treat not to be missed!

Drawing from the Asian influence, having been in this part of the world for a few years, Chef Jason creates a Matcha Brulee Chestnut Bouché de Noel ($65) for a fusion celebration. He cleverly mixes green tea with sweet chestnut mousse and rum for a light, creamy flavour. Lastly, take in the Christmas nostalgia with Black Forest Bouché de Noel ($65). This festive classic is a must-have at any year end party.

Not forgetting our Christmas stollen, which is freshly baked by Chief Baker, Ridhwan. This loaf-shaped fruit cake is made with premium whole almonds and almond paste and a must have at every Christmas party.

For a heartier feast, Executive Sous Chef Christopher Smith is serving up an extensive range of luxury foods like Traditional Roasted Turkey with Chestnut, Foie Gras Stuffing, Cranberry & Port Wine Sauce and Slow-Roasted Beef Loin served with Port Wine & Horseradish Sauce.
