Sous Vide is a professional cooking technique taking home cooks by storm, thanks in part to Sous Vide Supreme, the world's first consumer water oven designed for countertops everywhere. Now, UK residents have access to an even more compact version of the popular water oven, with the new SousVide Supreme Demi.

Sous vide is a gourmet technique in which food is vacuum sealed in airtight pouches and then simmered in a low-temperature water bath at a precise temperature throughout the cooking duration. The result is gourmet quality food cooked to perfection every time from edge to edge, tender, full of flavor and bursting with nutrients.

Sous vide cooking temperatures are typically between 60 to 88 degrees Celsius. The low temperatures mean food is gently cooked and can be left simmering for hours without overcooking. This is an incredible timesaver in the kitchen, enabling food to simmer until the moment it is ready to be served.

A variety of foods can be cooked sous vide, including seafood, meat, poultry, eggs, fruits, vegetables, desserts, and even infused alcohols. The technique achieves fail-safe results, with steak cooked medium-rare from edge to edge; vibrant vegetables; tender, juicy chicken breasts; and more. In addition, sous vide cooking is economical because it breaks down the fibers through the slow-cooking process, giving tougher and less expensive cuts of meat - such as flank steak or brisket - the tenderness and texture of filet mignon for a fraction of the cost.

The SousVide Supreme product line simplifies what was once a complex and purely professional culinary technique. There are two easy steps:

  1. season using anything from salt and pepper to seasoned butters, broths or fresh herbs, and vacuum-seal in the Sous Vide Supreme food-grade cooking pouches;

  2. submerge the pouches in the preheated water oven, and leave to simmer for the appropriate time or until ready to serve.

"I can honestly say that once people have tried cooking sous vide it will change the way they cook – forever," said Chef Jonathon Davies, winner of "Britain's Best Dish 2010" and a firm sous vide fan. "I can only imagine professional chefs all over the UK will be blowing steam out of their ears knowing such a great piece of equipment is now available to the home cook. The SousVide Supreme exudes quality, not only in its design but how it works and the food it produces. If you want to impress family and friends with an extremely high standard of tasty, mouthwatering food that's also very healthful, then a SousVide Supreme has got to be an essential item for any kitchen."

"There is enormous interest in products that simplify cooking, and even more enthusiasm for those that offer increased food value and quality," said Dr. Mary Dan Eades, co-founder of Eades Appliance Technology, the company that created the SousVide Supreme, and a respected nutrition expert, author. "The smaller new Demi model in black and grey is perfect for people with limited counter space, households that are only cooking for a few, or existing SousVide Supreme users who want the flexibility to cook foods at different temperatures simultaneously."

The compact SousVide Supreme Demi has a 9-litre cooking chamber. The energy-efficient Demi (approximately 28cm wide x 33cm long x 28cm high) sits conveniently on the countertop. Just like the original SousVide Supreme (the 11-litre premium stainless steel model), the Demi maintains water temperature to within one-half degree Celsius, using a patent-pending PID-controlled heating element to ensure accurate results, which is the key to sous vide success.
