Product Line Linked to Resurgence of Bison in American Cuisine


CHICAGO, IL--(Marketwired - Nov 18, 2013) - Cuisine Solutions, the world's leader in sous-vide foods, today announced a commercial agreement with Golden Bison to develop a new line of sous-vide bison dishes that will provide consumers with healthier, easy-to-prepare meal options. The Plain Smart product line, which is expected to launch in retail stores in early 2014, will include dishes such as Bison Bourguignon and Bison Flat Iron Steaks.

Sous-vide, French for "under vacuum," is a cooking technique pioneered by Cuisine Solutions in which food is vacuum sealed in plastic bags and slow-cooked in water at a precise temperature until it's evenly cooked through. This innovative technique seals in moisture to enhance food's natural flavors and eliminates the need for artificial additives or preservatives.

According to The Bison Council, bison meat has a number of health benefits over other proteins. Bison is lower in calories but has the same amount of protein as beef. It also contains less fat than beef, chicken, pork and turkey.
