Learn the Must-Know Knife Skills From Top Chefs

What are the top five knife skills I should have and what knives do I need?

CUTCO's team of culinary advisors -- Chef Fritz Sonnenschmidt CMC and Certified Global Master Chef (CGMC), Chef Judith Fertig and Chef Susan Goss -- shared what, in their opinion, amounts to the list of must-know knife skills every cook should have in their repertoire and the tools they'll need to get the job done.

Unequivocally, the most valuable knife skill is chopping, said Chef Goss from the helm of the West Town Tavern in Chicago. Her tool of choice? A trusty chef's knife.

"The most important knife skill is obviously uniform chopping. Most foods that are cooked or eaten raw together are chopped to a uniform size," she said. "Learning how to prep those different foods is crucial." She followed up with slicing an onion correctly and sectioning a chicken as her other top skills.

Want to put together a wow-worthy salad? Then there's nothing quite like a nice julienne, according to Chef Fertig.

"Adding matchstick pieces of veggies can take a salad from wallflower to ooh-la-la," she said. The chef's knife is the choice for julienning veggies.

Among Chef Sonnenschmidt's top 5 are boning fish or meat with a thin, flexible boning knife and halving a chicken or splitting lobster with heavy-duty kitchen shears.
