"I like to think of farmers in general as being very sustainable," says George Crave, part owner and cheese factory manager at Waterloo, Wisconsin's Crave Brothers Farm. "We work with the soil; we work with the land. We recycle nutrients and feed it to the cows. Cows produce the milk and meat, and of course the one thing that's left over after that is the manure." That manure has always been recycled as well, used in the fields as natural fertilizer to replenish the fields that the dairy cows will graze in. For George and many other farmers, using that manure as a renewable energy source is just a new way to do what they've always done -- live off the land in a sustainable way that will enable their livelihood for years to come.
