WASHINGTON, DC--(Marketwire - Sep 9, 2011) - On September 14, 2011, The Mayflower Hotel and The House of Ruinart will offer a Ruinart Sensory Dinner. Guests will enjoy dinner complementing a rare champagne tasting experience featuring Ruinart Champagne and expert food pairings by Chef Paolo Buffa of Café Promenade. The tasting will complement a three course dining experience, enhanced with the commentary of a special guest speaker, Michelle Desrosiers, Trade Development Manager for Moet Hennessy.

The dinner will be held at the luxury hotel in Washington, DC's restaurant, the Café Promenade, and will begin with a cocktail reception at 6:30 p.m., followed by dinner at 7pm. Dinner will start with a savory lobster salad, made up of ginger-citron poached lobster, arugula, baby radish and lemon vinn. Followed by a main course of juniper berry pan roasted pheasant, made up of anson mill polenta, roasted brussels sprout and kumquat-pineapple chutney. To end the evening guests will enjoy a dessert duet of cardamom chocolate lava and roasted white peach with jasmine zabaglione cream. The cost is $100 per person inclusive of tax and gratuity. About Chef Paolo Buffa
A graduate of Instituto Alberghiero Carlo Porta and Alta Palato, Buffa began his career at Milano's Osteria del Vecchio Canneto under the tutelage of Massimo Barracca. In 1991, Baracca opened Café Milano on Ocean Drive and Buffa arrived in the United States as Executive Chef of the new restaurant. In 2004, Buffa moved to New York and over the course of the next few years served as Executive Chef at Viola in Brooklyn, the Two-Star Michilin Pepolino in TriBeCa and Salute Restorante in Midtown Manhattan. In 2009 Chef Buffa opened Food Wine & Company in Bethesda, Maryland. As Senior Sous Chef at The Mayflower Buffa utilizes his passion for pairing American cuisine with Mediterranean flair, working with product offerings from small regional purveyors and preparing gluten free and organic menu offerings.
