"It's difficult to live here in Paris, brother: One has no idea what one could eat, one asks for black bread in vain." These were the words written by Count Scheremetjew to the Russian poet Alexander Puschkin in 1836. The words reflect the nature of the Russian taste in bread: Black bread, in other words bread baked from rye flour, formed the basis of the Russian diet for centuries both for the farmers and the ruling classes.

Tradition as an anchor -- bread in Russia
One of the best-known Russian bread types is the Borodinski (Borodinski chleb), a special baked bread which contains rye malt, molasses and coriander in its dough as well as flour and yeast. This typical sweet taste and aroma is loved right across the entire post-soviet area. The culinary homesickness experienced by many Russians living abroad is mainly connected with Borodinski bread. According to tradition, this bread was first baked by the nuns in the Borodino nunnery.

Tradition is extremely important for the baking industry in Russia. New innovations and ideas are inconceivable without these valuable experiences and starting points. The motor for the future is fed by this knowledge from the past. These approaches are compiled in order to present an overall image of the complete industry at the Modern Bakery Moscow. "New concepts which are closely connected to baking and confectionery are being further developed and refined -- core subjects are being cultivated and traditionally incorporated. The Modern Bakery Moscow combines tradition, innovation and moderately under one roof," explains Bernd D. Fichtner, managing director of Modern Bakery Moscow.

The 21st century bakery at the Modern Bakery Moscow 2014
The Modern Bakery Moscow takes up elements connected with bread and provides an outlook into the future of an entire industry. New subjects are moving to the foreground and increasing in importance. Baking nowadays is not just selling bread. Baking mirrors many different facets: Ice cream, chocolate, tea, coffee, entire shop concepts in addition to the route towards system gastronomy are no longer only side issues. "The customer requirements on a bakery have fundamentally expanded over the last few years. The entire industry is experiencing change and movement," explains Mr. Fichtner.

The 20th Modern Bakery Moscow will take place from 23 to 26 April 2014 in the central Expocentre trade fair halls in Moscow.
