Fall for Fresh Idaho Rainbow Trout

BUHL, ID--(Marketwired - September 11, 2014) - Rainbow trout is one of the easiest fish to prepare and a responsible menu choice. It was recognized as a "Best Choice" from Monterey Bay Aquarium's Seafood Watch program for the sustainably and ecologically responsible way it's farmed. Rainbow trout produces less waste due to its natural efficiency in converting its feed into protein. And U.S. farms do an excellent job of preventing escapes and species contamination.

Only 9% of consumed fish are caught and/or raised in American waters, making fresh rainbow trout one of the few species that's homegrown in the U.S. Seventy-five percent of U.S. trout is produced in Idaho in a complex system of aquifers and cold, pure, crystal-clear springs.

Rainbow trout made the 2010 Seafood Watch "Best of the Best" list. It is a nutritional powerhouse, with an abundance of Omega 3 fatty acids and 33 grams of lean protein per serving.

While seafood preparation can be intimidating, it doesn't need to be. With rainbow trout's mild, quick-cooking fillets, you can have dinner on the table in a snap. Trout fillets cook in roughly six minutes, and you can plate the entire meal in less than 15 minutes. Try this delicious Rainbow Trout with Chipotle Maple Glaze.

This recipe takes boneless rainbow trout fillets and adds a sweet/savory note with a chipotle maple glaze. Grilled butternut squash or roasted root vegetables make great accompaniments for your fall table.

Maple Chipotle Glazed Clear Springs® Trout with Fall Vegetables

Yield: 4 Servings

Ingredients:
For the Clear Springs Trout
:
4 Fresh Rainbow Trout Boneless Fillets
1 teaspoon chipotle powder
2 teaspoons kosher salt
1 teaspoon ground black pepper
1 tablespoon extra-virgin olive oil
¼ cup real maple syrup

For the squash:
½ butternut squash, peeled and sliced into ½-inch half moons
1 tablespoon extra-virgin olive oil
Salt and pepper
¼ cup maple syrup

Preheat grill or stovetop grill pan on medium-high heat. Once heated, lightly coat with oil or non-stick spray.

Mix chipotle powder, salt, pepper, olive oil and ¼ cup maple syrup together.
Coat Clear Springs Trout Fillets with maple chili glaze and set aside while preparing squash.

In a microwave-safe dish, toss the squash in oil, and microwave for 2 minutes. Sprinkle with salt and pepper, and place on hot grill next to the trout. Brush squash with half of the maple syrup as it cooks. Let trout and squash cook for approximately 2-3 minutes or until grill marks are well formed. Turn pieces over and cook for an additional 2-3 minutes, continuing to brush squash with remaining maple syrup. Check to make sure squash is tender.

Drizzle trout with additional chipotle glaze. If desired, serve with green beans with slivered almonds as an additional accompaniment.
