To celebrate National Celiac Awareness Month, Chef Andrei Leontieff, founder of Galeos Dressings, has created a special gluten-free recipe.

Gluten-Free Southwest Noodles

  • 3 ounces Shiitake mushrooms, sliced
  • 3 ounces Maitake mushrooms, sliced
  • 1 Japanese eggplant, peeled and sliced
  • 6 cloves garlic, sliced
  • 1 TBSP coconut oil
  • 2 packages gluten free noodles
  • 1/2 cup Galeos Miso Southwest dressing (or any of the other four flavors of Galeos Miso Gluten-Free Dressing)


Cook noodles according to package directions until tender. Drain.

In a large skillet, heat the coconut oil (add more if necessary) and cook the eggplant for about 2 minutes. Then add the mushrooms and continue cooking until vegetables are tender, about 2 - 3 minutes. Add the garlic and sauté for another minute. Add the drained noodles and the Galeos dressing. Gently stir together to coat evenly.

Serve immediately. Garnish with cilantro and parsley. Serves 2.
