Gimbal's Fine Candies and the Jelly Bean Make a Sweet Easter Pair for More Than a Century


SAN FRANCISCO, CA--(Marketwired - Mar 26, 2014) - Gimbal's Fine Candies has been making gourmet treats since 1898, when Alexander Gimbal founded the Gimbal Candy Kitchen in downtown San Francisco. Gourmet jelly beans are one of Gimbal's best-selling candies.

Jelly beans became an Easter staple in the 1930's, due to their shape resembling Easter eggs. Today enough jelly beans are purchased each Easter to wrap around the world over three times. Candy lovers celebrate Easter each year with Gimbal's delicious gourmet jelly beans, appreciating that they are free of major food allergens. All Gimbal's candies are peanut-free, gluten-free, dairy-free, egg-free and more. These ingredients are not allowed in any of Gimbals' facilities, so as to avoid any risk of cross contamination.

Unlike most jelly beans, Gimbals' gourmet jelly beans are made with real fruit juice and packed with antioxidants. Each serving includes 10% of daily recommended Vitamin C, and features flavor all the way from its chewy center to its delicate shell. Gimbal's also recently introduced new Sour Gourmet Jelly Beans.

It takes on average 12 days to make a single gourmet jelly bean. Flavors and colors are stirred into a hot slurry. This delicious blend is carefully poured into jelly bean shaped indentations pressed into trays of starch. The trays move into large ovens for several days before the little jelly bean centers are dusted, steamed, and rolled in sugar.

After curing, shells are created. This process, called panning, occurs in large rotating drums. With heat created through friction, layers of sugar, flavoring and color are gradually melted onto the jelly bean centers to build a shell. Trained candy artists then splash on colored speckles.

Lastly, meticulous polishing smooth's and shines the candies so that each gourmet jelly bean is perfectly shaped and glistening with gorgeous color.
