After time in Geneva, Edelmann returned to London, where he eventually landed as executive head chef at the Grosvenor House Hotel, where he opened the famous 90 Park Lane Restaurant. He eventually returned to the Savoy, where he spent 21 years as Maitre Chef des Cuisines, leading a team of 80 chefs and cooking up to 2,000 covers a day.

In the past 10 years, Edelmann became principal chef of Directors Table, where he trained chefs and designed innovative menus; entered a joint venture in Knightsbridge's Brompton Grill; received an honorary professorship from Thames Valley University and opened his own establishment, Anton's Restaurant, at Great Hallingbury Manor Hotel.
