"AKHA farmers are paid in excess of standard Fair Trade pricing, as well, we made the strategic decision to 'gift' 50 per cent of the profits earned by our company as a way to ensure the sustainability and prosperity of Doi Chaang," said John A. The Art of the French Press

"Personally, I can appreciate the flavour of the bean and achieve a more robust and customized profile using my French press versus using a standard drip machine," Rossi added. "The French press is easy to use, no paper filter is required, and everything from the temperature of the water to the length of time the coffee brews is controlled. The longer you let it brew, the deeper the flavour."

Tips for using a French press:

  • Water should be boiled to approximately 200-205 degrees and the coffee grounds should be coarse
  • Use 1-2 heaping tablespoons per cup, and put into the bottom of the press
  • For best results, pour in half the water, wait a minute and then pour in the rest as a way of stirring the bloom that forms on top
  • Steep the coffee for a minimum of 3-4 minutes, or for a more robust flavour, steep for 6-8 minutes before plunging the press
  • Plunge and enjoy
