Each morning at 7.30 Tony starts making Oven's signature dishes with Chef Andrea Vargas and Chef Dadan White. Most of the pride he has goes into his own signature dishes; the kind his mother made in Sicily where he grew up, Pasta and Tripe, Villa Rollatina, and Special Lasagna. Oven Gourmet Pizza has become a hot spot in Brooklyn since opening its doors a few months ago and has been getting much attention. Virgin Vines launched its new Chardonnay and Shiraz exclusively at Oven. Virgin Vines is the new wine label set up by heavy weight hitter Richard Branson of Virgin. Now rock stars and music promoters are launching their CDs there.

A full house every night in the restaurant meant a forced expansion for Oven in all aspects of its business. This includes home deliveries, lessons in making gourmet pizzas and pizza dough. Oven hand makes its pizza dough fresh every morning.

The warm public response to Oven's enticing and scintillating creative pizzas has meant the Oven group is in heavy negotiations with leaseholders to open new stores in Brooklyn and Manhattan in 2008 to bring its pizzas to a wider clientele. At present those outside of Brooklyn Heights can order via Oven's home and corporate delivery service.
