Marriott Chicago Chef Richard Green Named March Winner of Chicago Culinary Fight Club

Hotel Near Chicago Convention Center Celebrates Its Star Chef


CHICAGO, IL--(Marketwired - Apr 24, 2014) - Officials of the Marriott Chicago at Medical District/UIC and Rooks Corner, An American Bistro, just announced that their own resident Executive Chef Richard B. Green was named the March winner of the Chicago Culinary Fight Club. The theme was "Guinness and Green." 

Chicago Culinary Fight Club is a local monthly cooking competition where chefs from all walks of life can come to compete and showcase their culinary talents in the Tastebud Challenge. Within one hour, chefs have 30 seconds to pick from the ingredient table (pantry), and then fire up their 10,000 BTU burners and cook. The Chicago Culinary Fight Club motto is "If you can cook, then you can cook anywhere, with limited ingredients and on a time-crunch," and that's exactly what these talented chefs accomplish. 

Chef Green's winning dish for the March competition was Irish Balls. Green stated, "the dish consisted of parsley infused mashed potatoes stuffed with corned beef and house made sauerkraut, panko crusted, deep fried and served with a Guinness stout glaze reduction. Chef Green has a long history in the kitchen that precedes his work for the hotel near McCormick Place. He is a former US Naval Petty Officer & member of the Elite Navy Seals. After serving in the military for 8 years he put away his guns and picked up his chef knives instead. He holds certifications from the College of Dupage & Cuyahoba Community College in Nutrition, Hospitality Management and Culinary Arts. Before joining the Marriott Chicago at Medical District/UIC, Chef Green was the Chef d Cuisine at the Naperville Marriott and Chef/Owner of H2O Catering and Comfort Zone BBQ. He is most regionally noted for his Bar-B-Que, Gumbo and his house brined Corned Beef. Chef Green's style of cooking could be classified as rustic with southern influences, specializing in local and regional scratch made cooking. Sourcing the freshest sustainable products whenever possible that are prepared from the least processed ingredients available. "If you are what you eat, then why not eat the best foods possible," he says.
