The Mayflower(R) Renaissance Washington, DC Hotel's Senior Sous Chef Buffa Is Bringing His Own Style of Culinary Magic to the Historic Washington, DC Hotel

Taste the Flavors and Experience the Magic of Sous Chef Buffa at This Luxury Washington, DC Hotel

WASHINGTON, DC--(Marketwire - Sep 26, 2011) - Sit at the table and pick up a knife and fork and enjoy as the Mayflower® Renaissance Washington, DC senior Sous Chef Buffa is bringing his exciting culinary experience and skills to this luxury hotel in Washington, DC. A graduate of Instituto Alberghiero Carlo Porta and Alta Palato, Chef Buffa is Italian and was born and raised in Milan. Under the charge of Massimo Barracca, Buffa started his culinary career at Milano's Osteria del Vecchio Canneto and since then, he hasn't looked back.

Chef Buffa came to America in 1991 as the Executive Chef of Massimo Barracca's newly opened restaurant, Café Milano on Ocean Drive. He later moved to New York in 2004, where he worked for several restaurants, including Viola in Brooklyn, the Two-Star Michilin Pepolino in TriBeCa and Salute Restorante in Midtown Manhattan as an Executive Chef. For Chef Buffa, the decision to move to Washington, DC in 2009 was easy -- his new bride was moving to DC for a new job and DC has some of the best restaurants in the country. Chef Buffa showcased his culinary talents not only at The Mayflower's Washington, DC K Street restaurants, but also by working with the Food Wine & company in Bethesda, Maryland. Chef Buffa served as Executive Chef, opening chef and consultant from the start to its December 2010 opening.

According to Chef Buffa, "The opportunity to prepare menus and serve guests at the restaurants at The Mayflower is a joy for me. I have been able to incorporate my passion for pairing American cuisine with Mediterranean flair, expand our product offerings from small regional purveyors, and bring an entire new offering of gluten free and organic menu offerings to our guests." Creating new menus and respecting traditions at the renowned Café Promenade and Lobby Court is a thrilling opportunity for the out-going chef with international flair.

Chef Buffa is fluent in three languages, which is a quality that is highly appreciated among guests of The Mayflower's Café Promenade and Lobby Court restaurants. The client base of these two K Street restaurants in Washington, DC is comprised of individuals with various international backgrounds, interests and travel experiences. Jason Richter, Director of Beverage and Food, said, "We are very pleased to have Chef Paolo on our culinary team. As we move into the fall, we look forward to innovative seasonal recipes; the presentation of outstanding wine dinners and innovative dishes created with superb ingredients provided by regional suppliers, we look forward to sharing all of our new offerings with diners locally and our traveling guests."
