While she maintains that there are more women at the top in Europe, she says that the Australian industry is still largely male-dominated. "I don't know a single other female Executive Chef," says Sam.

Sam's theory on this is simply that it's such a physically demanding job. "You have to lift heavy things, be able to stand up for eighteen hours in intense heat and be very physically fit to keep moving. I go running on my days off, not just for fitness but to help counteract the stress and stay mentally fit as well," says Sam.

Despite having no female role models, Sam says that she has been mentored by some outstanding male Chefs who have taught her well during her 15 years of experience in fine dining kitchens.
