On the eve of Montreal's "International Symposium on Probiotics and Health", the company also highlighted recent findings that shed even stronger light on the healthful advantages of Liberte Kefir.

Current research highlighted by Liberte and conducted by Dr. Edward Farnworth, Senior Research Scientist, Agriculture and Agri-food Canada, Food Research and Development Centre and Chantal Matar, associate professor in the department of chemistry and biochemistry at the University of Moncton, disclosed that "orally administering Liberte's Kefir to mice had a preventive effect against the appearance of breast tumors."

"Kefir is a fermented milk product that contains a unique mixture of bacteria and yeasts," said Dr. Farnworth and Dr. Matar in a joint statement. "Our recent research has shown that, in experimental animals, the consumption of kefir modulates the immune response, implying that kefir contains bioactive bateria and/or compounds that enhance communication in the body's immune system."

According to Dr. Farnworth, Russians still use it today "to treat stomach ulcers, bilary system disorders, chronic enteritis, bronchitis and pneumonia. It's common for patients in Russian hospitals to be given kefir daily." He added that a single spoonful (15 ml) contains more than 5 billion live bacteria, and adding it to cereal or yogourt daily at breakfast, for example, can provide tangible benefits.

The word kefir is said to be derived from the Turkish word keif, loosely translating to "good feeling" or "feeling good". A batch of kefir grains consists of many individual bodies of a soft, gelatinous white biological mass. The composition of each grain is protein, lipids (fats) and a soluble-polysaccharide Kefiran complex.
