New Menus and Christmas Specials Mark the Season at the Vancouver Airport Marriott Hotel

Chef Danilo Ibarra Brings Extensive Experience to One of the Best Restaurants in Richmond, British Columbia

And so it does. Now under the leadership of Chef Danilo Ibarra, the restaurant is unveiling a new menu as well as special Christmas offerings, all of which draw inspiration from around the globe, utilize ingredients from the hotel's backyard and boast a reputation that is out of this world.

Chef Ibarra, whose professional pedigree includes training in classical French cuisine and stints at The Fish House and Glowbal, has enlivened the menu at American Grille -- and set a new bar for dining near the Vancouver Airport in the process.

Guests can choose from dishes as varied as Beef Bourguignon (featuring 12-hour marinated beef slow braised and served over gnocchi) and Albacore Tuna Ceviche. "This is an all-time favourite of mine," Chef Ibarra explains, "because it includes local fresh tuna, avocado, cilantro, jalapeno, red onions, coconut milk and freshly squeezed lime juice, all served with fresh plantain chips."

This mix of French and Latin, classic and new, comforting and exciting reflects Chef Ibarra's attitude toward food. It should be bright, flavourful and, most of all, fun. To that end, the restaurant participates in culinary challenges with local restaurants hosted each month by Vancouver Foodster.
