Noble's Head Pastry Chef Receives Prestigious Award

Rachael Burns Named Distinguished Visiting Chef, Johnson & Wales University

CHARLOTTE, NC--(Marketwire - February 22, 2010) - Rachael Burns, Head Pastry Chef for Noble's Restaurants, is the 2010 Distinguished Visiting Chef (DVC) at Johnson & Wales University. The DVC Award, presented in Charlotte since 1994, recognizes some of the nation's leading chefs who team up with JWU students to demonstrate techniques as well as offer tips for success.

As Head Pastry Chef and Boulanger at Jim Noble Restaurants, Burns' responsibilities include producing all breads, pastries, gelato, and desserts for Rooster's Wood-Fired Kitchen and Noble's Restaurant in Charlotte.

Burns' culinary training began in Massachusetts as a local French chef's apprentice. She received her Bachelor's of Science in Baking and Pastry Arts degree from Johnson & Wales University in Providence, RI. During college, Burns received several awards including the Johnson & Wales Outstanding Junior Award and the National Bread Leadership Counsel Rising Senior Award and Scholarship. She joined the team at Jim Noble Restaurants in January 2006.

Jim Noble Restaurants are locally owned by Chef Jim Noble, a High Point, NC, native whose heartfelt approach to slow food is inspired by French cooking visionaries Auguste Escoffier and Julia Child. Following their lead, Chef Jim began using local, organic ingredients to prepare meals for his own family. A trip to Napa, CA, in the early 80s introduced Chef Jim to the benefits of pairing excellent wines with expertly prepared meals and was inspired to open a restaurant, showcasing his food philosophy for the people of North Carolina.

Nearly three decades later, Jim Noble Restaurants are known for featuring local ingredients of exceptional quality, resulting in dishes Chef Jim describes as "New Southern Cuisine."
