BELLEVUE, WA--(Marketwire - December 15, 2009) - While Bellevue has experienced a steady stream of new businesses "popping" up, none do so as literally as the latest venture to join the downtown core. Now open in Bellevue Square, Popcorn Pavilion (1073 Bellevue Square) is a new locally-owned gourmet popcorn shop complete with a vintage East Coast boardwalk theme inviting shoppers to take a step back in time.

Featuring fresh-made gourmet popcorn, as well as Dolle's authentic salt water taffy and a range of fancy nuts, the 600 square foot store opened its doors on Dec. 9. This Saturday, Dec. 19, the company will officially celebrate its grand opening with a day of popcorn samples, gift giveaways and prizes, from noon to 6 p.m. The store is located in the mall near Macy's, and the event is free and open to the public.

Currently, the store features 18 unique popcorn flavors made fresh on-site daily using high-quality, pure ingredients. Options range from classics such as Caramel, White Cheddar and Kettle Corn, to more exotic flavors, including Sweet Banana, Cinnamon Bun and Green Tea & Sea Salt. While the sweet flavors are always popular, the company wanted to provide a more healthy option in its innovative Green Tea & Sea Salt offering, which uses organic popcorn and matcha green tea powder, and contains high levels of antioxidants and fiber.

Popcorn Pavilion was founded by local Bellevue residents Grant and Ashley Jones, who were inspired to bring the gourmet snack to the Eastside after observing Chicago's love affair with the popular kernels. They noted a lack of accessible high-quality popcorn in the Eastside area, and quickly went to work.

"We looked at this as not only a great business opportunity, but a way to simply brighten someone's day with a sweet treat," said Ashley Jones, who spent the last year perfecting the popcorn flavors and will serve as Popcorn Pavilion's head chef. "Historically, the popcorn industry has always done well, even during times of economic instability, including the Great Depression. There is something magical and nostalgic with popcorn, and our goal was to capture that in a family-friendly atmosphere."

The popcorn, taffy and fancy nuts are all served up to customers amid the eye-catching boardwalk backdrop. The owners landed on the motif as a way to instill a sense of simpler times and family vacations, making a stop at Popcorn Pavilion a true treat. The eye-catching design is fun for all ages and includes weathered floor-to-ceiling boardwalk murals, custom blown-glass popcorn lights, and the crowning touch, an observation window to watch the popcorn as it's made on site!

The popcorn is available in a variety of options, including 1-gallon and 6.5-gallon tins, as well as three-flavor gift boxes, and even several "Popcorn of the Month" club options.
