One of Chef Hamlin's key responsibilities is supporting Renaissance's AAA Four-Diamond status for the 6th year in a row.
Hamlin is a Local Chef with 18 years of professional Hotel, Restaurant, and Catering experience in the Saint Louis Area. Formally trained in Culinary Arts at Forest Park, Hamlin brings a fine dining background in Traditional French Cuisine to the hotel. Prior to joining the Renaissance team Hamlin owned and operated his own catering company, Fleur-De-Lis Catering, for 5 years.
Norah's also has new menus under Chef Hamlin's lead. "A lot of my food is influenced by these [French] techniques, using seasonal ingredients, adapting classic recipes to modern cuisine, and a simpler is better approach to some foods.
