In this pairing, master chocolatiers Gilles Marchal and Nicolas Cloiseau of La Maison du Chocolat show two different styles in the construction of tastes, which have sustained two generations. The sixth edition of the Duo de Ganaches includes Robert Linxe's timeless raspberry Salvador, which went on to define the legendary house of chocolate, encapsulating the perfect dose of pure fruit. Marchal honors the fruit-chocolate combination with the Noir de Cassis, a dark ganache emphasizing the flavour and aroma of cassis, while enhancing the pairing with delicate floral notes.

Salvador

Visionary Robert Linxe's famous Salvador is a harmonious blend of pure fruit and dark chocolate. With this ganache, he developed the art of chocolate degustation: Salvador opens with the intense flavour of dark chocolate, opens to the pure raspberry pulp, and ends with the intertwined richness of chocolate raspberry.

Noir de Cassis

Marchal and Cloiseau selected cassis, a complex, challenging fruit, for its rarity in the world of chocolate. The pulp of the Burgundy dark cassis fruit, prolonged by an infusion of cassis buds, magnifies the fruit aromas without bitterness and confers a vision resolutely different from those of other fruit ganaches. Beyond the fullness of dark chocolate's flavor, you first experience the fruit's natural intensity, which unveils the delicate floral note of cassis buds that transports the palate.
