One of a professional chef's best kept secrets is "sous vide," a method to cook moist, tender food that's full of flavour. Now the SousVide Supreme (www.sousvidesupreme.co.uk) -the world's first consumer water oven - is available throughout Scandanavia at selected retail outlets and at www.sousvidesupreme.co.uk.

Launched in the US at the end of 2009, the SousVide Supreme has been developed by Eades Appliance Technology and Drs. Michael and Mary Dan Eades, American physicians and respected nutrition experts. It is a compact countertop appliance that precisely and automatically regulates cooking temperatures to within one-half degree Celsius. 

The longer cooking times required for the sous vide technique dramatically tenderize even traditionally difficult cuts of meat, and many foods can be safely left in the SousVide Supreme for hours and sometimes days, remaining perfectly cooked until served. So a medium-rare steak cooked the conventional way might have a charred exterior, well-done edge and medium-rare centre, while with the SousVide Supreme it will be juicy medium-rare from edge to edge.

The SousVide Supreme can be used to cook a wide range of foods from seafood to meat, poultry, eggs, vegetables, fruit, puddings and more in just a few simple steps:

Season the food with salt and pepper, broth, fresh herbs or butter.

Seal the food in SousVide Supreme food-grade plastic pouches.

Simmer by submerging the food in the pouch into the water chamber, preheated to the right temperature, and let it cook for the desired time.

Serve after removing the food from the pouches.

Sear and Sauce are optional steps after cooking in the SousVide Supreme. Add a sauce, or for steak or other meat or fish, a quick sear in a pan, on a grill, or under a broiler can add texture on the outside while the inside remains incredibly tender.
