Wine and Food Pairing 101

Redelmeier is continually experimenting with food and wine using his own creative ideas and the best fresh local ingredients. Depending on the season, he encourages consumers to be creative with what's available, plentiful and fresh. "With so much local produce reaching its peak at harvest, early October is the best time to eat. It's my favourite time of the year," says Redelmeier.

"If Chardonnay is your favourite, why not create a recipe using ingredients and herbs that match the subtle apple, pear and citrus flavours in the wine?" suggests Redelmeier. "And if a full-bodied red is your thing, come up with a delectable side dish or cheese course." Made from 100% locally grown grapes and with natural acidity, Southbrook's VQA wines make a wonderful match with harvest meals.

Redelmeier, and Southbrook's other culinary and wine experts will be on-site on weekends in October and November leading fun and educational culinary presentations, such as cooking demonstrations, seasonal food and wine matches, and wine and barrel tastings, for the public.

Harvest Recipe and Wine Match from Southbrook

Curried Squash Soup
Ingredients: 2 cups of onions, fried until transparent
3 cups of squash
2 tablespoons of curry
3 cups of apple cider
2 tablespoons of chicken soup mix
1 cup of water
1 teaspoon of salt
Pepper to taste
1/2 cup of yoghurt/milk/cream

Fry the onions first, then process the onions, squash and a little cider (1 cup) until relatively smooth. Transfer to a large pot, add remaining ingredients and simmer, stirring occasionally.

- Add current peach chutney when serving
